Altieri is a working specialty-coffee finca on the slopes above Boquete, in the Chiriquí highlands of Panama. Nothing is staged for you. The picking, the fermentation, the drying, the cup — all of it runs on the farm's own calendar and its own conditions.
Apprenti Trips builds the frame around it. A few days that put you inside the work rather than in front of it. One to four travelers at a time, never a crowd. No experience needed — only attention. Real trades, real people, real conditions.
Three apprenticeships, one finca. Come in December through March to pick cherry and start the ferment. Come any month to read the drying beds and cup a lot into shape, or to master the roaster and pull your own espresso. Each runs three days or more, with no more than four travelers.
Watch the finca work. Taste what it makes. Take in the smell of the wet mill and the quiet of the mountain before you touch a thing.
